Let me know if it’s an original recipe, an adaptation of another recipe, or if it’s ripped straight from the web (Send the link) that’s okay. I just want to make sure EVERYONE gets the proper attribution. Also, tell me what category you’re putting it in.

Next week, we’ll be looking at side dishes…etc.

At the end of the month, I’ll be cobbling together some dinner menus using ONLY the recipes submitted. This is going to be fun, but I need a ton of recipes for this to work. So, tell your friends, neighbors, and even that dude you don’t like…drop by, and show me your food.

    Here is one of my favorites:
    Quinoa Salad

    1/4 c olive oil
    1/4 c red wine vinegar
    1 tbsp balsamic vinegar
    2 cloves minced garlic
    1 tsp paprika
    1/2 tsp oregano
    Salt and pepper to taste

    1 c. Quinoa
    2 c mushrooms
    1 1/2 c Garbonzo beans
    2 thinly sliced shallots
    2 c light packed baby spinach

    Cook the quinoa. While it’s cooking, make up the dressing. Then mix all together. Chill and serve. This is even great made up a day in advance and chilled overnight.

    It’s a very flexible recipe. Get creative with using other grains like bulgar, barley, or farro and other greens like arugula.
