Lo-Cal Salad Dressing
I originally stumbled on a recipe for a lo-cal Green Goddess type of dressing while reading through Cooking Light magazine. While their recipe is pretty good, I made some changes.
Specifically, I took out some of the salt and anise flavored madness. (Not my cup o’ tea.) So while this is not a DadsWhoChangeDiapers Original, I have made it mine.
Here’s what you’re going to need.
1 cup of Non-Fat Greek Yogurt (Make sure it’s Greek or your dressing will be very runny.)
1/2 cup Reduced-Fat Mayo
2 Tsp. Worcestershire Sauce
2 Tsp. Lime Juice
1 Tsp. Tabasco or other hot sauce you like. (I use Tabasco Chipotle or Crystal’s)
1-2 cloves of garlic (I usually do 2 because I likes me some garlic!)
Put all of that in the blender or food processor and blend until smooooth.
Then add,
2/3 Cup Parsley
1/3 Cup Chives
Blend until greeen and creeeaaamy
Optional: I like to add cucumber sometimes. Just make sure you use about a third of a cucumber. (Peel and remove the seeds!)
